There aren't any specifically gluten-free restaurants, but any restaurant will work with you.

Why every place you would like to eat at. Just let who every takes your order you need GF and you will be good

Almost every restaurant at Disney has an allergy menu now and it will list GF options. Check out the menus and see what sounds good to you. Even at buffets, the chefs will get you food from the back to prevent cross-contamination.

BTW, if you have any specific allergies that aren't in the standard: Gluten-Free, Dairy Free, etc., don't ask for the allergy menu, ask for the chef instead, you will have a much better experience, even if you also have some of the standard ones. Just something we learned on the last trip.
