best days to go in each park...

I'm starting to plan my tripe for 2/5-3/12. I've been to Disney so many times, but I wanted to get your input on the schedule I have so far. If you have suggestions let me know!!

Sat- arrive, lunch at Downtown Disney
Sun- MGM/MK
Mon- Chef Mickey's, MK, PI
Tues- AK, EPCOT, Boardwalk
Wed- Universal/IOA (possible to do both in one day?)
Thurs- Crystal Palace, MK, PI
Fri- Kona Cafe, EPCOT, MGM
Sat- Checkout, DOwntown Disney

I'm also assuming the parks will close by 8pm, except for the World Showcase which I think is open a little later. That's why I plan on going to EPCOT Tuesday afternoon, and straight to the Boardwalk afterwards. I'll defintely be making PS for the character breakfasts.

The hours are posted on WDW site so you can be sure of times.
It took us a day to do Universal but we don't like to rush. I can't imagine doing both parks in one day but if you move move move then I guess you could.
 
If you're going to be at WDW on Saturday early enough for lunch, I'd just plan on doing a theme park that day. Saturday night typically has the longest hours of the week at the Magic Kingdom, and you will probably even see a Spectromagic on the schedule. Yes, attendance is typically high at the MK on Saturday, but just go with the flow and use FastPass. Early-February is a slow time, so it should be more than manageable.

To avoid spending additional $$$ on tickets, plan an "off" day in the middle of your trip. You'll probably need it to recharge with such an agressive schedule.

You could start the day with the character breakfast at Cape May Cafe, then walk over to the Boardwalk. A little swimming in the afternoon and shopping at Downtown Disney, then cap your day off with one of your planned visits to Pleasure Island (you don't need to do a theme park and a "Plus" on the same day.)

Another approach would be to start the day at Chef Mickey's, then spend the rest of the morning riding the monorail to tour the other MK resorts.
