Best Cool Weather Summer vacations

DH and I cannot handle summer heat anymore. We live in Texas so our summer vacation priority has to be somewhere with cool weather.
We travel the last week of June/first week of July because we can have two full weeks plus the Friday of the week before but DH only has to use 4 vacation days due to shut down and summer schedule.

‘21 we went to Michigan- Western coast and Mackinac Island

This year- Ireland

We are starting to think about what we want to start researching for next year. We had thought that Italy would be next but we enjoyed these past two summer vacations so much more than Key West in ‘18 and Cozumel in ‘19 because of the break from the heat.

Considering any cooler European countries. If we stay domestic, maybe a few days in Boston and then a road trip up to Maine. Canada- either east coast or West.

What are your favorite cool weather summer destinations?

What are your favorite cool weather summer destinations?
Iceland and other Northern European countries (Norway, Sweden, Finland). You can also go the the Acores, Madeira or Canarias where this is springtime all year round.
 
New England can be very hot in the summer…we have had extremely hot humid weather the last few weeks.

What about Montreal and Quebec and the Lake Placid area?

These areas were pretty hot and humid this summer as well.

Maine, especially along the coast going past the Bar Harbor and Acadia area and away from the crowds. Or go up even farther into Canada to Nova Scotia or Prince Edward Island (one of our favorites).

Just to clarify things about Alaska … it can get hot and dry in the interior, Fairbanks often experiences 80+degree temperatures in June and July. Hence the many forest fires that happen in summer.
 
Alaska and Scotland (and Ireland, but you've already done that) are probably my favorites in terms of summer weather that isn't too hot, isn't too brutally sunny for my fair skin, and have loads to see and do. The Scottish isles - Skye and Harris and Lewis - were particularly lovely, with lots of gorgeous hiking and cute towns and great food in moderate temps.
 
Washington State. Olympic National Park, visit the Northwest corner, Mount Rainier, Mount Saint Helens. Beautiful hiking. Amazing views. Cool historic sites and lodges. And usually the weather is cool and even a bit rainy.
Getting ready to do this next week, plus Cascades NP, Mt. Baker, Vancouver, Victoria, Portland OR. They've had a heatwave but will 'cool down' to low 80s when we will be there (that's still better than our humid upper 90s). Can't wait. Hopefully this time will work out, we've already had to postpone twice.

We went to Denmark one summer and it was heavenly weather. High of 70 midday and light jacket weather in the morning and evening. We slept with the windows open since there really isn't a/c anywhere.

Copenhagen is an incredible city with so much to see and do. Sweden is a quick trip as well with Copenhagen as your base city.
 
I recommend the PNW -- Oregon, Washington or Vancouver, Canada. We have had some large but brief heatwaves the last two summers but its generally very pleasant with highs in the 70's to 80's and little to no humidity to speak of.
