Best celebration breakfast/brunch I.Drive area

Hi am Off to celebrate my 40th in Orlando in May(never to old for Disney) staying on I drive as I have done before. I am looking for recommendations for a birthday breakfast/brunch.Somewhere maybe with a bit of luxury ie Champagne!My birthday is midweek so Sunday brunch is out.Ideas please folks.

To be honest, I only know of places that do brunch on a Sunday. The Renaissance Orlando (opposite Sea World) used to do a fantastic Sunday brunch but I think they have stopped doing it now.

Not a brunch but Grand Floridian cafe at Grand floridian disney resort is a nice breakfast in a nice setting.

Gaylord palms used to do a brunch but again only on sunday.

I was going to suggest somewhere like the Peabody - but not sure if you will get a champagne breakfast midweek. Also, Mimis cafe gets good reviews and they have a bar - not sure if it will be open in the morning though

Recommended to me a few times but never tried it (we rarely eat breakfast)
Served until 10:30am.
