best birthday restaurant?

We have made several visits to WDW over the years with our girls and will have our first DL trip in July. We'll be there for our oldest daughter's 20th birthday. Any suggestions for birthday dinner restaurants in the park? Should we try to coordinate with Fantasmic or fireworks? A vegan, vegetarian, and one who could eat tacos everyday are in our family. We live in Houston where we have dozens of amazing restaurants featuring food from around the world so I'm most concerned with a fun experience and ahppy celebration. The birthday girl is an adventurous eater and we all love dessert!

We'll be at beloved DLR for my daughter's 12th birthday, so I can't wait to see what others say!! My friend is thinking of taking us to Goofy's.
 
The most vegan friendly TS in DL is Carnation. There's a vegan burger on the menu. There aren't any tacos at any TS in the parks. You can try Tortilla Jo's in DTD. Goofy's Kitchen in DLH does a character dinner. In DCA the best choice for a vegan is probably Carthay. Just let them know in advance on the reservation and they should be able to make something.
 
If money isn't an issue, I'd try the chefs table at Napa Rose. They will personalize it to your specifications. And the food is amazing!
 

Also, is the birthday girl vegan or vegetarian? Because while I don't consider Blue Bayou particularly vegan friendly (I personally hate the macque choux, I know this is a personal preference and some like it), the bread and sides are also not vegan, so I feel like it's an even worse value than BB is normally. However, I will say that I've sucked it up many times and found something that worked for me, even if it's just sides for the sake of someone else's birthday, anniversary, etc. There are also tofu and veggie skewers at Big Thunder Ranch BBQ, if you're looking for something less formal. The recipe for the coleslaw that I've seen is vegan. Not really sure about the other sides, but again, if you make a reservation and note in advance they might be able to do more.
 
In regards to vegan, a CM at Disney Dining said that the only 2 TS restaurants that have vegan options is Carnation Café in DL and Wine Country Trattoria in DCA. If you eat at a non vegan restaurant, I'm sure they can make something for you. My vegan friend would find something on any menu and ask the chef to take out items that are not vegan.
