Hard to answer without knowing your likes and dislikes, and what you are looking for. Are you meat and potatos or adventerous eaters? Any allergies or special needs? Are you going to be on a dining plan? Are you wine drinkers?
DH & I went to Le Cellier when we did a trip without kids. We loved it! Although some people do take children, we agreed that we would not want to go there with our kids (especially the youngest).

We are willing to try any kind of food, as long as it's not too crazy, which I am sure that no restaurant at WDW would be. After all they have to appeal to the masses.
In my fantasy trip (you know, the one where I've finally talked the dbf into coming to Disney with me? ), we go to the California Grill for a wonderful evening out, so that is where I would suggest.
Bistro is an excellent choice, along with Flying Fish, CA Grill,
Il Mulino, BlueZoo. I have heard that Citricos has been excellent lately, we haven't been in a while.
