What are some common quantities of both that are brought on board by passengers? For example, is bringing 12 beers and 2 bottles of wine average.... not enough.... too much?

Probably couldn't get away with a keg or anything! We brought about 8 or 9 bottles of our own wine on our last 7-day and somehow STILL managed to run up a huge bar tab! Of course, we did come home with 3 of those bottles unopened...
Well..... On our last 4 night cruise, we took 2 cases of beer and a large bottle of Crown (we just weren't sure what we would be in the mood for ). The last night we asked our fantastic room steward if he drank beer; he very excitedly said, "YES!". He had been keeping our soft-sided cooler filled with ice - we told him we would be leaving him beverages in addition to his tip. He thanked us over and over again and asked that we just leave it in the room upon leaving. We did just that - we felt so good knowing that we made his day and could thank him for his hard work. We plan on doing the same in February. Just a thought.
I know we left a good 7 or 8 beers and some diet cokes last time. Didn't really say anything but I assumed the steward would figure out SOMETHING to do with it
