You didn't say how many kids or any ages, but we'll try to give you a couple of our things.
We love (and I mean love) the Segway Tour at Epcot. Now unfortunately, it's for licensed drivers only and you need a ressie. But great fun! And if it's booked, its still fun to try one out at Future World in one of the Innoventions Bldg's I believe.
We also love the individual resort and their amenities...like riding bikes/surrey's/ driving the watercraft.
And we have also enjoyed 'touring' the other resorts that we've not stayed at. Like eating at Wilderness even though your not staying there. Having ice cream at the Yacht Club, seeing the Boardwalk, Downtown Disney/DisneyQuest.
I have 2 in college and a 4th grader, so we can always find something different!
What about an Illuminations' Cruise? We may do that this year also. My dh did the horticulture tour at Epcot. I know money may be an issue (it always is for our budget

, but there really are tons to do!
Hope this helps and have a blast!
