This is a great recipe that my family loves. Fairly easy to do.
Calgary Red Eye Stew
1 1/2 lbs stewing beef, cubed
1/4 cup flour
2 tsp salt
1/4 tsp pepper
1/4 cup oil
2 onions, thinly sliced
1 clove garlic
1 bottle beer
1 tbsp soy sauce
1 tbsp worcestershire
1 tbsp H.P. sauce
1/2 tsp thyme
2 bay leaves
2 cups tomato juice
3 potatoes, peeled and diced
Dredge beef in mixture of flour, salt and pepper. Brown in hot oil. Add onion and garlic and cook until onion is transparent. Add beer, soy, worcestershire, H.P., thyme and bay leaves. Bring to a boil, then cover and simmer for 1 hour. Add tomato juice and simmer 30 minutes. Add potatoes and cook for 20 minutes. Remove bay leaves. Serves 6.
