As long as it is commercially packaged, no problem. It will pass US Customs, and I have found no restrictions on carriers. I am not sure why previous poster would have had it confiscated by Westjet - the airline doesn't generally check your carryon - that is the domain of security and customs.
My DS has a severe food allergy, and Jerky is one of the snacks he can eat. There is nothing that airlines offer on their menus that he can safely consume. So we did our homework before travelling. Although there are restrictions on meat products crossing the border, commercially processed and packaged meats are allowed (confirmed with US Customs). We do carry unopened packages until after boarding. There are no known restrictions on carrying your own snacks on board in any IATA regulations that I could find, the only regulations are Customs.
I suppose that AMOUNT could also make a difference. Are you taking a quantity that could make you appear like you are importing rather than bringing in for personal use?
