Question about Animal Kingdom's Beacon of Magic:

I'm planning a visit to AK on a weekday in early December where the park closes at 7pm. Since it'll get dark before that, is there somewhere I can go to know for sure it they'll be doing a BoM while I'm there?

You'll have no trouble seeing it. It runs every night starting when it gets dark.
PLENTY of open area where you can see the Tree of Life.
Best angle is on the southern side of the Tree (and there is much "open area" on that side.)
It is the major entry and exit pathway in Animal Kingdom.
