I have to side with your son. We've done both, and loved both, but personally we think there is a really big difference in the atmosphere. At lunch it is a majorly bustling place because it is counter service and people are going through the line and then wandering around looking for a place to sit, getting up to refill drinks, and wandering around just looking at the place because is is easy to do so in that type of atmosphere. It is significantly more casual than dinner.
At dinner, it is sit down. You get a menu, your order is taken. There are not a large number of customers constantly walking around your table or the restaurant. The food is different- lunch is casual with a lot of sandwiches while dinner is more upscale. The beast storms through the restaurant here and there. There is a formal picture with the beast. There are linens, and fancy folded napkins. You can still wander around a little to look if you want and you will see plenty of people going to look at the rose (FYI- try not to get the table right in front of the rose at either lunch or dinner, unless you want people around you constantly), but there is not near the bustle the find at lunch which in my opinion makes for a totally different atmosphere.
The restaurant decor itself is of course the same and beautiful at either lunch or dinner.
Don't let the lunch line fool you, it usually does not take nearly as long as it looks. Even if it looks huge, ask a CM in the area. It looked like at least an hour to us, but we asked a CM and she said 20 minutes. Turned out to only be 15 minutes and well worth the wait. If I couldn't get a dinner ADR, I would not hesitate to eat there for lunch.
