Baked Macaroni and Cheese

Hi!
Does anyone have a good recipe for baked homemade macaroni and cheese? People tell me butter, milk and cheese but they don't tell me how much of each to use so I was hoping someone here has a recipe.

I don't really use a recipe - I just dump stuff in the pot. I make a roux, add milk & then cheese. However, I think I originally started with this recipe:

Baked Macaroni & Cheese
2 macaroni
6 c boiling water
1 tsp salt
2 tbl butter
1 Tbl flour
1½ c milk
1½ c grated/shredded cheese

Cook macaroni in salted water & drain. Make a roux with the butter, flour & milk. Place a layer of macaroni in the bottom of a greased casserole. Add cheese & white sauce. Repeat until the casserole is filled. Bake at 375 for 30 min. Serves 6.

I usually end up mixing the cheese right into the white sauce so that it melts before I put it into the oven. If it doesn't seem thick enough after I add the cheese, I add Wondra flour & whisk it in. (The Wondra is so fine that it doesn't make lumps.) Then I just mix the macaroni into the cheese sauce & pour into the casserole.

I often make it with a variety of cheeses - particularly the cheese ends I get at the deli - but a really sharp cheddar makes the best mac & cheese!!! :teeth: (Although some Swiss makes nice "strings.")
 
just made this a few days ago

one lb box of macaroni cooked and placed in casserole dish
in a skillet.....put in two or three tablespoons of margarine
melt on low....if you have to pick up the skillet and let it melt on the side.
add a few tablespoons of flour and mix into a paste
add two or three cups of milk
I use a whole block of extra sharp cheddar and cut into pieces....let it simmer and melt......put on low and stir
when the cheese is almost melted......pour over the macaroni and mix up good
in a small dish.......mix three tablespoons of butter with italian bread crumbs.....in microwave..
dabble on the top.......and bake for 30 minutes...
this is delicious and the kids always want Gramma to make it
 
I like more of a custard style mac and cheese. I don't have a recipe but will try to go memory and the above recipes

1lb mac cooked
toss with 1 1/2 cups shredded sharp cheddar cheese

place in baking dish.
top with custard mixture of 3 eggs and 2 cups milk
put 1/2- 1 cup shredded cheese on top. Bake at 350 for about 45 min

WISCONSIN MAC AND CHEESE


Buttered steamed broccoli and carrots are great with this ultimate comfort food; end with grapes and cookies.
1 1/3 cups small elbow macaroni
1 slice whole wheat bread
2 tablespoons (1/4 stick) butter
2 tablespoons all purpose flour
3/4 cup low-fat milk
3/4 cup canned vegetable broth
2 green onions, thinly sliced
1 1/2 cups (packed) grated sharp cheddar cheese
Cook macaroni in medium saucepan of boiling salted water until tender but still firm to bite. Drain.
Meanwhile, grind bread in processor to fine crumbs; transfer to small bowl. Melt butter in medium saucepan. Mix 1/2 tablespoon into crumbs. Add flour to remaining butter; whisk over medium heat 2 minutes. Gradually whisk in milk and broth. Bring to boil, whisking constantly. Add green onions. Whisk 2 minutes longer. Remove from heat. Add cheese; stir until melted.
Preheat broiler. Mix macaroni into sauce. Season to taste with salt and pepper. Spoon into 9-inch pie plate. Sprinkle crumbs over. Broil until crumbs brown, about 2 minutes, and serve.
2 Servings; can be doubled.
 
I don't have exact measurements. I always make extra pasta so if I put too much liquid in I can just add more pasta.

elbow macaroni
velveeta
montery jack cheese
sharp cheedar cheese
mild cheedar cheese
half and half
butter
salt and pepper

I coook all the macaroni , through some butter in when it's hot so it melts. add all the chese half and half and salt and pepper. mix very well. Bake at 375 until cheese is melted and slightly brown on top.

I make this and it's a big hit...

1 lb box of macaroni
1 lb bar of Velveeta
1 cup of sweetened condensed milk
1 lb block of sharp cheddar
1 lb block of mild cheddar
1 1/2 tsp garlic powder
1 tsp dry mustard

Melt Velveeta in condensed milk. Mix in cooked macaroni and spices. Cut up both cheddars into approximately 1 inch squares and mix with macaroni mixture. Pour into casserole, top with bread crumbs and bake at 350 for 35 minutes.

Very, very rich but yummy!
 
Mac and Cheese is such a good comfort food. all of these sound yummy!

I have to ask, did you mean evaporated milk? Sweetened condensed milk is like liquid sugar, isn't it?

I have used the recipe from Joy of Cooking for years. Figure I should use a classic cookbook for a classic dish!

I have to admit, I thought the SAME thing. I don't think they meant to say "sweetened". Ewww!
