PAP????? it was sooooooo yummy, they had it at the breakfast buffet, some african like grits , i would love to try to make it at home, anyone know what it was????? or how to make it???

Crumbly Pap

(Serves 6)

Ingredients

750 ml water
2 tsp. salt
1 kg fine white corn meal, in place of maize meal

Preparation

Bring water to boil. Pour meal into centre of water to form a pile, add salt, but do not stir. Reduce heat by removing from stove. Put lid on and let sit for 5 minutes. Stir with fork or wooden spoon until pap is fine-grained and crumbly. Replace lid and let simmer for 45 minutes until done.
 
I liked the pap, too! It is basically fine grits. Did you have it at breakfast or dinner? At breakfast, I also loved the quinoa that was right next to the pap. I make quinoa at home, but I cook it like rice and serve it at dinner. At Boma for Brea fast they made it like an oatmeal and put brown sugar in it. then the little toasted quinoa on the side to put on top was fabulous!

I loved the quinoa too. Where did you find it? How should it be prepared? I cannot find iquinoa in a regular grocery store. I am hoping to find it at a specialty store like Whole Foods.
 

Just recently I have been finding quinoa (pronounced KEEN-wah) at my Publix (regular grocery store.) I am sure you will find it at Whole Foods. The brand I buy is called "Arrowhead Mills."

I do not know how to prepare it the way they serve it at breakfast...I need to get that recipe! But I cook it like rice...2 parts (or a little less) of water with 1 part quinoa. Make sure you rinse the quinoa very well before preparing it or it can be bitter.

Sometimes I toss the hot quinoa (drain if there is any excess water) in some vinegar and olive oil, and add chopped veggies, feta cheese, mandarin oranges, shrimp...the possibilities are endless! And it is the only grain that is also a complete protein by itself.
