I'm really torn here:

5/8 - My Bday🥳, first park day of our trip.
UT recommends Epcot as the recommended park, but lists MK as avg.

5/11 - Mother's Day, I'm a mom & my MIL is coming with us.

I feel compelled to start at 5/8 at MK, and do Epcot for Mother's day since it's the flower festival etc.

Not sure if I would be making a mistake by not going by the recommendations of the crowd calendars though. I don't mind switching them if it makes more sense.

Mother’s Day being on Sunday seems like it would make for long lines at the food booths in Epcot, if that’s a priority for you. There are flower and garden concerts on both your days.

The food booths, and even the concerts aren't too much of a priority - mostly ride focused for Epcot ☺
