But does looking for 2 bedrooms open up more opportunity? (Are 2 bedrooms the last to go so they are more abundant?)

That's what I am trying to understand correctly.
One and two bedroom units generally don't book up as fast as studios, but again, it really depends upon your desired resort and time that you travel. Don't buy SSR if your sole intent is to stay elsewhere, and never stay at SSR. While you should be able to book other resorts most of the time, there are times you would not be able to book anything at the 7 month window. Never buy a resort you would absolutely be unhappy staying at, as there are times you may not have a choice. Also, always book your home resort during the 11 month window to be sure you have a place to stay, then try to change at 7 months.

Not that much and certain resorts they only have lock offs so when studios are gone the 2br are gone as well. Also many times people prefer the dedicated 2BR so those go first and then there is only the lock-offs left which you need studio availability for to book.

Really the only thing easier is going to be 1BR.

Personally just own where I want to stay most years and if we want to try some place at some point we can always check but will not really ever care if we only ever stay at BWV or RIV.

The other thing at play is point inflation BWV BCV and BRV have really cheap two bedrooms compared to RIV - point inflation started after SSR. So those resorts you are going to see a lot more competition for those two bedrooms at seven months. OKW has bargain rooms, but is less popular and easier to get.

BWV ONLY has lockoffs, which makes two bedrooms as difficult to get as studios.

One bedrooms are the easiest. Two bedrooms are SLIGHTLY easier than studios, but not by much.
