I took the simple route, but I'm so glad we made our own books. I bought multicolored cardstock in the 6 inch by 6 inch size I believe. My kids each picked out there favorite colors and arranged them in the order they wanted. I think each book has 30 pages maybe. Then I took them to Staples and had them bound. I also had a clear sheet put on the front and back there.
When I brought them home my kids went crazy with Disney stickers on the front and back cover under the protective plastic sheet. DS did Cars, Buzz and Woody, Mickey, Donald, etc. DD did princesses, Mickey, Minnie, etc. We wrote names and contact info inside in case they were lost, hoping someone would mail them back to us or call us.
We took several colors of Sharpies (the click kind) in a baggie. DD especially had fun choosing which color page and marker best suited the character (Ariel signed in turquoise on bright green). We left the page to the left of each autograph blank and stuck a picture of that character with the kids when we got home. Turned out great for us!
