We will be in Orlando arriving late on Thurs (8/25) and departing early on Thurs (9/1). Right now it looks like the best day for us to hit US/IOA will be Saturday 8/27 or possibly Sunday 8/28. Will we wish we would have rearranged our Disney itinerary to avoid the weekend crowds at US/IOA? I've only been to US/IOA once before and that was in late November and on a Monday so the parks were pretty empty.

I'm not sure if you have a question. Pre Labor Day weekend will be very busy.

The end of August finds the crowds slowing down but it's still busy on weekends. If you can switch your days around and go during the week, you should...especially if you're going to try to do both parks in a single day.
