If you want a buffet the Showboat has an awsome one. The only place I have had a nice sit down dinner was in Trump Marina. I don't know the name but it was a steak place.
We go to AC about once a month. Tropicana has some great restaurants.
Cuba Libre is awesome. The Palm, Red Square, all good! A very nice place to walk around before or after too. Enjoy your aloneness...

I have not been to the Borgata yet, but I would think with being the newest hotel it would have some good restaurants. Perhaps check out the hotel web pages.
Check out the Tropicana website for The Quarter. As someone else mentioned Cuba Libre is very good. PF Changs is good as well, a little noisy though. They list all the restaurants on the website!! Hope you pick somewhere good.
If you want to get away from the casinos for a little bit, try Dock's Oyster House, just a short ride up Atlantic Av. We were just there this past weekend. It has a great menu and great wine list. It is an old A.C. restaurant, over 100 years old. They also have a website where you can look at their menu and make ressies if you wish..
We also had a nice lunch at the House of Blues in The Showboat.
