The Bonavista peninsula in eastern NL is gorgeous in summer - not sure about over Easter. You are right, there would likely still be snow until late May / June. June would be great with whale watching, great hiking trails and ice bergs and many tourist places to see. For example: Bird Island in nearby Elliston is a great place to see wild puffins from land. It is also the root cellar capital of the world, BTW, you see root cellars at nearly every house. Elizabeth J cottages are nice (two bed rooms) but small. A much larger place is Lodge's Loft which is an entire luxurious house. Worth checking out, IMO.
WE love visiting the Bonavista/Trinity area.
Gros Morne on the west coast is also interesting with fjords and tablelands to explore. It's a bit of a drive, but The Northern peninsula and L'anse aux Meadows is our plan for a holiday destination next summer. This is the site of the earliest known migration of Europeans to North America in the 11th century by Norsemen. History!
