I know there are a bunch of us on the DIS doing Atkins - thought it would be great to have a thread to share some of the great low-carb recipes we all come up with!

This morning I tried the Atkins Baking Mix for the first time. I made the pancakes listed on the back but I did them a little bit differently and they came out awesome! They tasted just like cinnamon french toast!!

Here's what I used:

1/2 cup Atkins Baking Mix
1/2 tsp baking powder
1/4 tsp salt
1/8 tsp cinnamon
1/8 tsp nutmeg
2 packets Spenda
1 tsp vanilla
2 eggs
1.5 tsps melted butter
2 tbsp half&half in a measuring cup - add water to make 3/4 cup total. (their recipe calls for soy milk which I really dislike so I improvised).

Mix everthing together and let sit for 5 min - then make your pancakes! Made my way it has about 10.2g of carbs and the recipe made ten 5 inch pancakes - so just a hair over 1g carbs per pancake! And they taste awesome!!

I had 3 pancakes for breakfast with 2 tbsp sugar free syrupe on top - total carbs 5g! :D

I almost felt like I was cheating!

I haven't been on my diet since last November and I've gained so much more weight.

Maybe it's time to make a commitment, again.

Sounds yummy, CynJ! I have tried the pancake mix, which is pretty good. I do have the bake mix, too. I think I know what I am having for breakfast tomorrow! The muffin mix is really good, too. Cranberry/Orange is my favorite.
 

I tried to post this earlier but I got the dreaded "Forget it the DIS server hates you" message!

Here's another of my favorites:

Cut up a chicken breast or two, a half cup green pepper (larger chunks) put in frying pan with some water to help cook it - add some cayenne pepper and a dash of the liquid Red Hot (I like really HOT food! - add however much you prefer). Cook all of the water off (making sure chix and peppers are cooked through). Turn out of the frying pan onto plate and sprinkle 1/4 to 1/2 cup shredded cheddar chz over the top. Serve with sour cream on the side.

I could eat this 7 days a week!!!! Pre-Atkins I would add onion to it as well - but I would rather save my carbs for something else.

2 chix breast =0 carbs
1/2 cup green pepper =3.4g carb
1/2 cup cheese (2 ounces)= 2g carb
2 tbsp sour cream = 1.2g carb
======================
total = 6.6 carbs

This is a lot of food in a sitting - when I eat this its generally my biggest meal of the day.
 
I'm not on Atkins, but would love to cut down on carbs. Are these mixes available in the grocery stores? Would love to try the muffin mix! Guessing the baking aisle?:) Thanks for any information.
 
Hi Faith!

In my Stop & Shop the Atkins stuff is in the drug area next to the vitamins, Ensure, and the Slimfast.

The baking mix I used can be used to replace flour in any recipe.

I gave in and had one of those HUGE bagels for breakfast. I have to stop the carbs! :0)

You can also order from www.atkinscenter.com. Our grocery store only carries the blueberry muffin mix. On the website they also have cranberry/orange and banana/nut. The Cranberry/orange is my favorite! I have also found the mixes at vitamin and health food stores.
 
Thanks Mrs. PH! I checked Meijer's yesterday and they also only had the blueberry. I was a little taken back by the $6.99 though. The orange cranberry would be my choice, so thanks for the link to the atkins site.:)
 
I came up with something on Friday that I am finding helpful and thought I would share.....

I went into Excel and created a spread sheet that I can print and post on the fridge - it has the days of the week and under each day is 20 boxes - each box represents 1g carbs. As I eat/drink anything I X off a box. If something is say 1.5 carbs I would X off one box and put a / in another. It makes keeping track really easy!!! If anyone wants the spreadsheet I would be happy to share! Just send me an email!

By the way on Atkins 10 days and I have lost almost 9lbs! :bounce:
 
I start Atkins on Wednesday (i cant start tomorrow as its bank holiday here and nothing is open for me to get supplies) so these ideas are just great :D

i know for the first two weeks you cant have a beer, but what about after those two weeks? Can anyone recommend a low carb beer???

PixiePower, according to my carb counter, all light beers have 4 carbs. White wine is zero, as well as most liquors (ie: rum, gin, vodka, etc.). You have to watch what you may mix it with. I think that it is okay after the first two weeks, but I would limit it as much as possible. Beer tends to trigger cravings.
 
OK guys, I have tried close to 60 low-carb recipes, and most are pretty bad. However, this one is hands down the all-time favorite. I served it to 10 people on Easter and nobody guessed it was low carb! See what you think.....


Ganache Glazed Vanilla Cheesecake

3 8-oz. cream cheese
2/3 cup Splenda
1 1/2 Tbsp. all-purpose flour
3 large eggs
2 Tbsp. sour cream
2 tsp. vanilla

Preheat oven to 450 degrees. Beat cream cheese, Splenda and flour at medium speed until well blended. Add eggs one at a time, blending thoroughly after each one. Blend in sour cream and vanilla.

Pour into a Pam sprayed 9" springform pan. Bake for 10 minutes at 450, then reduce oven temp. to 250 degrees. Continue baking for 30-35 minutes until set. Loosen cake from rim but do not remove from pan until cool. Place cake in fridge to chill while preparing the ganache.

Ganache

1/2 cup heavy whipping cream
1 Tbsp. butter (not margarine)
2 oz. UNSWEETENED baking chocolate
1 tsp. vanilla
1/3 cup Splenda

Place cream and butter in small saucepan, heat until ALMOST boiling. (Don't let it boil). Add chocolate, stirring until melted. Remove from heat, stir in vanilla and Splenda, mixing well.

Cool for about 10 minutes then beat lightly with a whisk until very smooth. Remove sides of pan from cheesecake. Pour ganache over the top of the cheesecake and smooth out. Refrigerate until hardened.

12 servings=5.9 carbs
14 servings=5 carbs
16 servings=4.3 carbs

Cindy's Spinach Salad

1 cup baby spinach
1 cup lettuce
1/2 small cucumber
1/2 cup green pepper
1 stalk celery
1/4 shredded mozzeralla
Olive oil
Black pepper


This is a great salad. It makes enough for me for two meals - total carbs 7.6g
 
Couple more tips:

I love Hidden Valley Ranch dressing - but I was surprised to see that the bottled version contains sugar while the packed of HVR that you mix yourself doesnt'. Something to look out for.

I bought some stuff off of the Atkins website to try. Here's what I got and what I think of it:

Unsweetened Ketchup = :) its very good and compares to Heinz like this per tablespoon:
Heinz- carbs 4 sodium 190
Atkins - carbs 1 sodium 60

Sugar free BBQ sauce = :) its good smells wonderful too! compared to Kraft original 2 tbsp:
Kraft- carbs 9 sodium 410
Atkins- carbs 2 sodium 540

I also bought the beef jerky! :) It makes a nice snack with a couple pieces of cheddar! They are individually packaged in single servings - makes a great grab&go snack!
 
Another concoction of mine.......

Turkey Club Salad

1 cup lettuce
3 cherry tomatoes (sliced up)
2 strips bacon (cut into bite-size pieces)
2 pieces deli turkey breast (cut into bite-size pieces)
mayo to taste

Total carbs: 2.2!
 
Taco Salad

In the aisle with the taco dinners I found that Old El Paso sells the taco seasoning in a little canister. Doing out the math on it each teaspoon is .66 carbs. Heres my taco salad:

1.5 hamburger patties (0g)
2 teaspoons taco seasoning (1.2g)

brown hamburger - add seasoning and some water - cook off water

1 cup lettuce (.4g)
1/4 cup shredded cheddar chz (1g)
6 cherry tomatos diced up (3.6g)
2 tablespoons sour cream (1g)

Total carbs: 7.2 :) This is a big salad!
