Brent - DH is actually on his own version of "Atkins" He wants to lose about 20-30 more lbs, but for him it's not a "diet" but a lifestyle change! He basically reads labels, watches his carb intake and eats low carb food - mostly meats and salads, and makes sure he isn't missing anything like fibre.
He has stopped eating breads, potatos, rice, etc. but most inportantly he has stopped eating french fries and potato chips (his favorites!)
Luckily, he was never into deserts or sweets so I guess it's much easier for him. He doesn't plan to go back to eating "junk" again.
He has had luck replacing chips with pork rinds (he loves them - yuk!

) and our trick at WDW was that we took a few bags with us. I used ziploc's to divide them up into small portions to take with us to the park. (Nuts, etc would work too, but our DS is allergic to nuts!)
We also have one of those plug in coolers that we take in the car, then use it as a fridge in our hotel rooms. We stock it with suger free jello, cheese and snack meats for late night cravings.
He also uses the "burger salad" trick when we do counter service or fast food. It hasn't been easy for him but now that he's 4 months into it it almost seems like he's been eating this way for ever!
