Asparagus

Our favorite by far is asparagus with sage and parmesan, about as simple a recipe as they come:
* tear up a handful of sage leaves, and mix with a couple of tablespoons of soft butter
* prepare the asparagus (I use an asparagus boiler with an inch of water at the bottom, and boil the asparagus for five minutes uncovered, and seven minutes covered)
* spread the sage-butter over the asparagus, add grated parmesan and enjoy

Another one we do now and then is asparagus with hard-boiled eggs: prepare the asparagus, spread on some butter, dice the hard-boiled eggs and throw them on.
 
I just steam them.

Everyone in my family loves them steamed plain, no butter no oil or anything like that.
 
Oven roasted! Snap off the tough ends of the asparagus. Drizzle olive oil, salt and pepper and mix. Bake at 450 for 10-15 minutes, depending on how thick they are. I only prefer the very very thin spears and they don't take long to bake.



Here is another way to fix them. It is a Paula Deen recipe and it is delicious!

PHYLLO WRAPPED ASPARAGUS

8 or 9 asparagus spears, depending on size
1/2 (16-ounce) package frozen phyllo dough sheets, thawed
1/4 cup butter, melted
1/4 cup finely grated Parmesan

Preheat oven to 375 degrees F.

Snap off the tough ends of the asparagus. Unwrap the phyllo and cut the stack in half lengthwise. Reserve 1 stack for later use. Cover the phyllo with a damp towel to keep it from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Sprinkle with some Parmesan. Place 2 to 3 asparagus spears on the short end of the sheet. Roll up, jelly-roll style. Place each piece, seam side down, on a baking sheet. Brush with more melted butter and sprinkle with more Parmesan. Repeat until all the asparagus spears are used up. Place baking sheet in oven and bake for 15 to 18 minutes, or until golden brown and crispy.

We had asparagus on the grill yesterday evening thanks to all the great tips! I brushed them with olive oil and then sprinkled lightly with salt & pepper, grilled for about 3 minutes and they were delicious.

We had NY strip steak, asparagus, roasted yellow squash, zuccinin, bell pepper, onion, & garlic and roasted potatoes, french bread and salad. It was so good!!!! We took all this down to my dad's to grill it out and he was so happy! :goodvibes
 

I drizzle with olive oil and then minced garlic. Wrap it up in tin foil and do it on the grill.
 
This is too funny.

For something different last summer, I took fresh asparagus, wrapped in proscuitto, rolled the whole thing in olive oil, salt & pepper and grilled them.

Well, my DH (who thought he hated asparagus) loved them so much we make them almost every week now. Actually, he sometimes makes a huge batch of them and will freeze them to eat the whole week.

I'm just plain asparagus'ed out, but am excited to try the phyllo-asparagus. Sounds yummy!

What's funny is that I had bought some asparagus last week and was going to have it for dinner last night. I was going to roast it as in my previous post but dinner was already prepared for me when I got home from work :lovestruc and it was done on the grill as you had it above. It was SO good.

:) I think DH and dad enjoyed it more than if I would have taken them out for a meal. My dad kept saying "you can't beat a meal like that" and "we are going to have to do this again". It was all spur of the moment. I was sitting here at work looking at the grocery ads and noticed they had a really good deal on steaks and they had asparagus for .99 per pound. So that's when I decided I'd ask for tips for cooking it. So glad I did. When I texted DH to see if he wanted to grill out he said yes! yes! yes! When I got home with the goods they had the grills cleaned and ready to go, charcoal was already going......so we had dinner ready in no time.

Now I'm sitting here wishing there had been left overs.....:goodvibes
 
Boil them until they are well done. Then roll each piece in a slice of ham.

Serve them on a hot plate with melted butter and hard boiled eggs sliced in half.

I peel them (yes, peel--if you peel the lower ends of the stalks with a potato peeler, you only half to cut a small slice off the bottom). Then I steam them, put on a little butter and salt, and serve. They should still be bright green; an olive green, overcooked slice of asparagus is a sad thing to me.
