Ash Wednesday = Feb 17 - need meatless meal ideas

Meatless Wednesday during Covid after a storm when I haven't been to the grocery store for any fresh veggies in a week.

What to have for lunch and dinner? We're actually thinking of ordering veggie pizza for dinner. Tomato soup for lunch?

Anyone have any good meatless meal ideas that don't require fresh veggies?
 
We are having classic tuna noodle casserole. Haven't had it in at least 10 years if not more.

Dh and I ate it a lot in our early marriage. We had kids that didn't like fish. It's now just us again.

We are actually looking forward to it! I made it tonight so we could eat it for lunch , too, tomorrow.
 
I have a baked ziti recipe from the Disney Family Cookbook but I can't seem to find the recipe online. it uses an egg and cheese -- not sure if you are only going beefless or 100% vegan.

I found it in a google doc :)

  • 1 box of ziti
  • salt
  • 4 cups of homemade tomato sauce OR 2 jars of store-bought spaghetti sauce
  • 15 oz container of ricotta cheese
  • 2 cups shredded mozzarella
  • 1 egg
  • 1/2 cup shredded parmesan
  • 1 box frozen chopped spinach (thawed) or 1 bag baby spinach, chopped

  1. Preheat oven to 350.
  2. Cook ziti according to package directions in salted water.
  3. While the ziti cooks, combine egg, parmesan, ricotta, and 3 cups of sauce in a large bowl. If you are making a meat variation, brown the sausage or ground beef. If you are making a vegetable variation, lightly saute the zucchini and/or mushrooms. If you are making spinach ziti, you can add the spinach directly into the sauce.
  4. Drain the pasta, and add it to the sauce mixture. Mix well.
  5. Add the remaining cup of sauce to the bottom of a 9x13 casserole pan. Layer pasta, vegetables or meat, and shredded mozzarella in the pan. Repeat the layers until all ingredients are used. Be sure to save mozzarella for the top!
  6. Bake for 20-25 minutes, or until the edges are bubbly and the cheese is melted.
 

I'm being lazy. We're having veggie pizza - pre-made crusts from Trader Joes spread with pesto and minced garlic, topped with an Italian cheese blend, marinated artichoke hearts, black olives, sun dried tomatoes, green peppers, and on mine, sweet & spicy pickled jalapenos.

For us, just no meat. Fish is okay and eggs and cheese are okay, too. I'm told that meat sauce is fine, as long as it doesn't have the meat in it anymore. Same with chicken soup - just no chicken. I've always avoided those, since I figured it was a technicality.

Baked Ziti sounds good. :)
 
We always do cheese and mushroom pizza for dinner Ash Wednesday... Usually its because of going to Church but we are skipping this time around as we don't want ashes in our hair... at least on your forehead if there's any left before bed they can be wiped off so you don't get them on your sheets.
We're still having pizza though.

Lunch isn't as big of an issue during Lent. Egg salad is the usual.
For me dinner gets a bit more boring because we usually go out and the rest of my family gets fish fry. I don't like any kind of fish and about the only meatless option is salad with no meat or mac n cheese so I usually end up eating mac n cheese...

My mom loves tuna noodle casserole. I don't like any kind of fish so I always hated eating it as a kid.
My dad likes it but says its "lunch" as he is not a fan of one dish meals.
They have it occasionally and actually just had it a few weeks ago.

Pancakes with a fruit topping...

If you have bananas, canned pineapple, bagged shredded coconut, some rum, sugar, and fat (butter or vegan butter), you can make a great topping:)...just start with the butter, saute the fruit, add sugar and rum, and cook off the rum and serve...

It should be a nice lunch/brunch:)...

PS - If you have macademia nuts, and can have tree nuts (I can't now), some toasted and crushed ones do send this totally over the top - but even without, it's awesome:)...
 
We eat meatless about twice a week. These are some of the dishes in regular rotation since DGD is still doing remote learning and I need to make her lunch as well as dinner:

Italian pasta casseroles with ricotta and tomato sauce

cold sesame noodles with peanut sauce and julienned veggies
various bean soups with or w/o dumplings

tofu and veggie fried rice

salade nicoise with tuna packed in olive oil

Rachel Ray’s version of bouillabaisse

canned sardines packed in tomato sauce on toast w/ chopped tomatoes and capers

vegetable ramen noodle soup with stir fried tofu

vegetable soup with potato gnocchi

rice vermicelli with fresh soft herbs, Asian veggies, and tofu

thin sliced radishes and cukes on toast with a cup of vegetable soup. Current fav soup is carrot and ginger as it has a nice zing and fresh carrots are readily available

omelet stuffed with sautéed greens or minced herbs

pan fried vegetable Chinese dumplings

tuna puttanesca sauce over pasta

pan fried bean cakes

nachos with veggies in adobo sauce
 
We’re doing “brinner” tomorrow- specifically Mickey waffles. They’re great cause I can add fruit to them, or just drown them in chocolate syrup. Or both.

I’m taking notes of these suggestions... planning on going “meatless” (pescatarian) for most of Lent. I’m not going to beat myself up if I have chicken or whatever once or a week, but I thought it would be good to try this year.
 
I ordered some pancakes from a diner last night and had half of the order for dinner, and will have the other half for lunch today. This morning I had an egg sandwich. Took some liquid egg whites, microwaved it in a bowl to get an egg patty, and put some ketchup on it.

For dinner tonight I'm doing cauliflower gnocchi. Other Fridays during Lent? Probably lots of pizza and other meatless Italian foods 😆

Thanks for the tuna casserole reminder! Haven’t had any in donkey years too.
My youngest son still dislikes fish unless it’s tuna from a can. He still doesn’t realize he ate white fish filets regularly as a child and it was named chicken fingers in his honor.....
 
I'm going for fish tonight (either mahi mahi, haddock or halibut) with a side of rice pilaf and the dreaded green beans with Goya salad seasoning. I've got a new electric griddle that's great indoor grilling. Just sprinkle a bit of oil and Malibu seasoning and we're good to go.

Or there's another snow storm coming and maybe we should just get a mushroom pizza because we're going to be stuck in the house for the next 3 days..........
 
Blah - forgot it was Ash Wednesday. Already served my (Catholic school kid) a hot dago for breakfast. Oops.

I have a roast ready to go for dinner, too. Might have to pivot.

I suck as a Catholic.
I went to Catholic school and we had a retreat on a Lenten Friday. The only lunch option was an Italian hoagie. The priest blessed them and told us to eat them
