"Very well, very well" (don't know why I repeat it?!?)
"all right"
"Fine, and you?"

My Dad likes to be funny:
"tolerable"
"good looking as ever"
"fine as frog hair"

I used to work in a little bookstore,and this guy used to come in a couple of times a week. I'd say "Hi, how are you?" And he'd always answer "Fine as frog's hair!" Every single time. Drove me nuts.
