Here is something for you...
1-2lbs chicken pieces - boiled than shredded or chopped(I used breasts and shredded it or buy the frozen chicken pieces)
1 bunch celery-chopped
2 medium onions (I used yellow)
2 jalapenos - seeded and finely chopped
8-10 cups chicken broth ( I used 2 containers of the Swanson box of broth)
8-10 tsp Chili Powder(I used McCormicks Mexican Hot)
4-5 tsp ground cumin
1 cup half and half
1/4 cup butter
cornstarch
cilantro ( I use tons...cause I like it)
cheddar
tortilla strips (i used chips, I don't know where to get strips)
green onion
Directions -In a large pot; add broth, cumin and chili powder, turn heat to low and let simmer. In a large skillet; add butter, chicken, celery, onion and jalapeno...( I throw my celery, onion and jalapeno in the food processor, makes it smoother) cook until onion and celery are semi soft. Add chicken mixture to the pot of broth, bring to a boil, cook until celery and onion are soft ( in separate small bowl, mix cold water and cornstarch, slowly work into soup to thicken). Turn off heat to pot, add half and half. Serve in bowls, top with cilantro, grated cheese and green onions
