Are there really better weekdays to visit certain parks?

Trying to plan my fast passes for our September trip,and am getting confused with all the conflicting info online about the best and worst days to visit the theme parks! I've looked at several different websites- undercover tourist, touring plans, etc....We're going the first week of September. Does it really make a difference what day we do Magic Kingdom versus Hollywood studios or Epcot? Animal kingdom is open late every night now, should that make a difference in our planning? Thanks in advance- would love to hear any experiences and advice!
 
Yes, very much.
You'll see a huge difference in going to MK on Saturday or Monday vs. Tuesday or Wednesday. Or on a day with EMH.
Any park with EMH is going to be more crowded than all the others.
During party season MK is going to be less crowded on a party day.
But if you try to go to MK on Monday you'll think "wow, this is crazy crowded" but if you go to AK on Monday it will feel empty. Go to MK on Tuesday and it will be much less crowded than Monday was.
So many guests think they have to start and end their trips at MK it makes it nuts on Monday and Saturday, since many guests come and go on Sunday.
I for one don't get the opinion, we never start our trips at MK, usually at AK. Last month we didn't get to MK till 4 days in. It's all WDW to me and my family, MK doesn't hold more weight than the other parks do.
 
With the exception of MK on the weekends, I say no, it makes no real difference. MK is noticeably more crowded on the weekends, probably a combination of locals coming in as well as people starting/ending their one week trips in MK. Otherwise, Tuesday looks like Thursday to us. This is even more true in AK, Epcot, HS. If I didn't know just by looking at my phone, I couldn't tell you if it's Monday, Friday or Sunday when I'm in a park. I haven't actually mapped it out, but we hop a lot, so I'm sure we've been in all the different parks on all 7 days in a week at some point. We really do lose track of what day of the week it is when we're there, especially when we go for really long trips. It all blends together.

It's typically more dependent on time of year than day of the week.
