Are restaurants open during evening EMH hours?

Does anyone know if and what restaurants are open during the four parks' extended evening hours?

It really varies night by night and restaurant by restaurant. When I was in MK for EMH last year, Cosmic's was open one time, but not the other. I guess it also depends on who they can get to work.
