Are park tickets worth the cost Easter weekend?

I have a 3 night, Friday to Monday stay at Wilderness Lodge over Easter weekend, one of the most crowded times of the year. I plan on going to Universal at least one day with my AP (not worried about getting on a lot of rides, I just want to hang out in Diagon Alley for a few hours), and my arrival day will be for Disney Springs. That leaves Sunday and Monday.

My question, would you buy a 1 day ($150) or 2 day ($270) ticket for those last 2 days, or should I save the money and do some things around the resorts? The only new attractions is Remy's, which I've been on in Paris before. I realize the answer is different for everyone, but I'm wondering what you personally would do in this situation. My flight is late enough Monday that I can get a full day at the parks before leaving.
 
How often do you get to Orlando? Do you have any other WDW trips planned with multiday tickets at a much lower cost per visit? Are you tired of Disney parks or does going to one sound fun?

We don't get there all that often, so like to hit one of the Disney theme parks on every visit (even short ones at crowd 10 levels -- we just keep our expectations in check about crowds and how much we'll be able to do). We never visit more than two Disney parks on any one trip, so the higher park prices are just the cost of admission, and we think worth it, but we love the Disney parks.

My 26 year old would go to the MK as it's is favorite and he likes to hit that place once every time he is in Orlando. If I was traveling with him, I'd let him pick.

If it were up to me to pick and I was in your shoes (you were doing the trip with me and letting me plan), I'd probably do one park and one resort day with those extra days. I'd probably go to Epcot because Flower and Garden is on (just because I've always wanted to see that and have never been).
 
I might do a one day in Epcot. Flower and Garden is a nice festival with the pretty topiaries and great food, and Epcot absorbs crowds much better than other parks since it is less about the rides.

I get down there once or twice a year, however 2022 might be an exception because I've got a 2 week Arizona/Backstage Magic Disneyland Trip. But I'm sure I'll be back for a longer 4 park trip in 2023 or possibly late 2022. I've been to Flower and Garden once and it was nice, so nothing major will be new.

I've heard good things about Genie+ at Magic Kingdom, so I'm thinking I'll at least go one day to try that and get on a good number of classic attractions. Now the debate would be going to Epcot to see the new nighttime show and enjoy Flower and Garden.
