Are any shows open?

Pretty much anything that doesn't involve live actors is open, with the exception of Hall of Presidents, which is closed as is normal when a new president is inagurated. The Frozen Sing-A-Long is open, which is just about the only show with actors I can think of that is open.

The bird show at AK is also open, we really enjoyed it because it was just the trainers and the birds without all the silly character stuff.

Don't know if you consider these "shows", but Philharmagic, Muppets, and the EPCOT movies are open. However, they all run at perhaps 1/4 of their pre-covid capacity, so there are often lines (not too bad, but you can't count on getting into the very next show as in the past)

There were live actors for the Disney Junior show, it was a shortened version of the previous show, but my kids still enjoyed it (alot!)
Live performers for Voices of Liberty show too, which we also enjoyed a lot during Festival of the arts (new show coming for F&Gtoo)

Correct me if I'm wrong, haven't been since Covid, but going in May, so I've been reading up on this. I'll miss Lion King, Beauty and the Beast and Hoop De Doo Review.

More shows keep opening up, but many are still closed.
Agree, that your best bet is watching the Disney site to see what is open during your stay.
That may change up to a few days before your trip, just like park hours.
