Excursions: We were going to do the Stingray tour because my FInlaw went and he Loved it. I know the kids will probably be iffy about it once in the water, but at least they'll be able to say they tried it

There was an article in Travel and Leisure about Grand Cayman, talking about mostly the lawyers and bankers that go there to live for a few years and the restaurants and places they frequent. If it's possible, I'd like to take a cab around the island. When we were in Nassau last year, there were plenty of limos and cabs lined up with drivers offering tours of the island. Halfway through the day my DH said, you know, we should have taken a tour of the island with one of those guys, and I said, yeah, I wanted to do that too; but it was getting late and we wanted back on the ship.
If they offer something similar in GC, we'll do that too.
Cozumel - I've heard from a few people that XCaret is Da Bomb - I haven't heard one bad review. I've heard that travel times are from 45 minutes to two hours. I've also heard that you can get sea sick on the ferry ride to the mainland, but then my DH points out that the people who got sick might not be used to the sea. I'm hoping that's the case - we're on the water often and I've only gotten sea sick once.
I know that the allure of Xcaret is mostly in the night-time shows, and that being a cruise excursion we'll be unable to see them, but we still want to give it a shot. There was a show on The Travel Channel about National Parks and XCaret was featured.
I guess it's a Mexican National Park. If you see it, tape it and see if you'd like what XCaret has to offer.
There's an underground river that you ride in/on an inner tube that I hear wonderful reviews about. There are also lots of dolphin shows and the atmosphere is paradise. The excursion offers lunch, too. Also, I've read if you do the Disney excursion to XCaret, if you're late the ship will wait for you. If you do it alone and you're late, you're outta luck.
Key West? I'm gonna hit all the art galleries in search of beautiful tropical paintings I can't get up here in NY. There's also a Jet Boat tour that we took 15 years ago that was supercool - we'll see if we can do that again.
We're often at the beach during the summer, so we're not looking for a beach day excurision.
Has anyone else heard of any other excursions?
Welcome dvc2themax! My daughters, at cruise time, will be 13 and 14. My neice will be 13, too, and they can't wait to check out the teen club.
