Applesauce Cake (baked In A Jar)

I just got this recipe and tried it and it is great.


Mountain Applesauce Cake Recipe (baked in a jar)


2/3 Cup Crisco Shortening
2 1/3 Cup Sugar
4 Eggs
2 Cups Applesauce
2/3 Cups Water
2 1/3 Cups of All Purpose Flour
1/2 tsp Baking Powder
2 tsp Baking Soda
1 1/2 tsp salt
1 tsp Allspice
2/3 Cup Chopped Walnuts
1 tsp cinnamon

Sterililze 7 pint size wide mouth jars and lids. Cream together shortening and sugar. Beat in eggs, applesauce and water. Sift together flour, baking powder, soda, salt and spices. Add to applesauce mixture, stir in nuts.

I add raisins to a couple and it was also very good with the raisins and walnut mixture.

Grease inside of each jar. Fill jars half full with cake mixture.
Bake 325 Degrees for 45 minutes. WITHOUT LIDS. Place the jars on a cookie sheet that you have put in the oven first.

Remove one jar at a time from oven, wipe seal edge clean. Put lid and ring on each and tighten. Jar will seal as cake cools. Store as you would other can goods.
 
LOL Thats what I was wondering too. Even with the jar greased will they really pop out whole?
 

Actually my husband tasted the cake and ate the whole thing out of the jar. I have read that you can make it in any wide mouth jar. The mason jars the top is smaller than the bottom.

A friend of mine sliced it into 4, almost like sticks and said she got it out that way.
 
What a neat idea!

I just had a thought. Instead of the pint size, you could use the samll (8 oz?) jelly jars for gifts to the elderly who live alone. My grandmother would never have been able to use everything in the pint jar before it went bad. Once she hit 80 she didn't eat as much, but loved her sweets! In the jelly jar she still would have had enough to serve to a visiting friend.

I wonder if it would work with other dense cake/bread recipes?
