Has anyone tried to exchange their dessert for an appetizer? I know it would be just a small salad or maybe a cup of soup. I'm okay with that. None of their desserts "wow" me and, besides that, I want to walk over to Ample Hills after dinner. If they don't, we will just pass on dessert. But it would be nice if we could even get a cup of soup.

Are you asking about redeeming a dining plan credit? Which plan are you on?

I assume you are talking about on the DDP correct?
If so, no they do not allow the substitution of an appetizer, soup or salad for a dessert on the plan. Many have asked

"Many have asked?" Really? This is the first time I've noticed it mentioned here.

OP, I'm going to guess that the answer probably is no, but it can't hurt to ask. :)

Yes you can, see this FAQ:

http://www.disneyfoodblog.com/disney-dining-plan-faq/

I don’t eat dessert. Can I get an appetizer instead?

When available at a table service restaurant, you can substitute your dessert for a fruit plate, side salad, or cup of soup. At quick service restaurants, your dessert or non-alcoholic beverage may be substituted for any item that is an eligible snack item, as long as it is within the same transaction

That is an old FAQ, considering there is no longer a dessert with the QS meal, and even trading the drink is now mostly gone.

Even if it wasn't old, they should not have used the word "can." For TS, it has always been "may be able to." Each restaurant gets to decide if they will give you something other than a dessert for that entitlement. What they give you, if anything, is up to them. They MAY give you a choice, they MAY say you can only have a small cup of soup, they MAY say sorry but we don't allow any substitution.

OP, it never hurts to ask, but I wouldn't use the word appetizer when you ask. Ask for that small cup of soup or an additional vegetable or side salad. If you ask to trade for an app, they will assume you mean something on the menu, and that will always be a no.

Like Sharonabe said, OP, just say that you're not a fan of sweets so could you swap your dessert course for something else.

I have heard that some people have had success in the last recent months (2017 DDP rules) with getting a soup, cheese plate, or fruit. As always YMMV and it will largely depend on your waiter/ess.

I try to limit sugar and do not do sugar substitutes or sugar alcohols so I have noticed the previous discussions on this matter. Yes, it has been talked about but that doesn't mean we can't talk about it again.

Also, you might not have noticed but there is a sub thread for the disney dining plan. I mention this because you might get more help there not as a reprimand.

You will never get an appetizer. You may be able to trade the dessert for a small side-salad or cup of soup. Some restaurants offer a cheese or fruit plate on the dessert menu, so you could get that, but it would be pretty obvious and not a trade.

I guess I mislabeled the title. I know we can't get an actual appetizer in exchange for the dessert. I never "expected" that. I was just hoping for a small salad instead. It's really no big deal. I just wondered if anyone had done it at Flying Fish.
