in general, we've found the most flexibility at the Disney-owned restaurants. Places like Les Chefs tend to "stick to the rules" perhaps because they may have a more difficult time getting correct compensation if your order varies from the plan. The independents contract with Disney to provide an entree/dessert/beverage for a specific price, and they must prove that they actually provided the foods they're claiming, so when the appetizer rings up under the appetizer category instead of entree category, they may not get reimbursed by Disney for that. Perhaps the computer system does not allow them to ring apps under entree category...I would guess all menu listings are tied to inventory systems, too so chances are they do not allow for "free-form" entry. You enter what is ordered with little choice to categories.
