Hookay, this is a tricky one ... as best I understand I think the question boils down to what happens with the last two weeks. Assuming I understand all the threads correctly ...
With the 10 day ticket, you will be able to book into the second week 60 days out, because you can book the lower of up to 10 days or else the # of days you have entitlements starting 60 days out from check in. If I have either misunderstood the loophole or they closed it so that you can only book length of stay, then you can only book a few days at 30 days out in the 2nd week. You
may not be able to book into the third week at all, since I don't know what happens if you try to book for a span of more than 14 days on a 10 day ticket. I couldn't find the answer on Mesaboy's thread -- doesn't mean it wasn't there, just that I couldn't find it.
With the AP, you should be able to book 60-days out for both your first and last weeks onsite, including day of arrival and departure, so one day of your second week will actually be covered. Even if this doesn't go smoothly in
MDE because of the relative rarity of the situation, according to the "rules" you are entitled to it so a call to Disney IT should be able to fix it. The question is whether those on-site days count towards your seven total days of anytime entitlements that you would be able to book 30 days out, and I suspect strongly that the answer is that they do - you have already also assumed this. You could call Disney and ask, but to be honest this one is tricky enough and I've seen enough people report different things about some of these questions that I wouldn't take any answer as gospel and would be prepared to find differently when I tried it, and to be unable to get a different result out of Disney IT than you got out of MDE.
So, to sum up:
60 days booking into 2nd week:

60 days booking into 3rd week:

MYW - definitely if 60-day not possible, but only up to 10 days total on ticket

Based these answers, I would go with the AP. If you go with the MYW ticket, the best you will get is a small # of days in the 2nd week that may or may not be able to be booked 60 days out. On top of that, even if you convert to the AP on the first day you're there, those 10 days of ressies are going against your 7 day max (I think), so you will have to choose between making FP+ ressies for the remainder of your second week on short notice as you come in the window by getting below seven total days, or else making ressies for the third week immediately -- again on relatively short notice compared to the 60 day window. There is even a small possibility that if you convert to the AP before you have used up three days worth of FP ressies, then any time you try to make a change to your existing reservations the system will "notice" that you have more days than you are supposed to -- say that on day two you decide that you want to cancel your day 9 ressies for AK and go to MK instead, you may find that you are unable to do this.
