We are DVC owners and get AP every other or every 3 years. We would like to take advantage of Free Dining and we wonder if it is possible to buy the complete MYW package (Room/ticket/dining); use the room, free dining and AP for one trip and carry over the tickets to use on a trip after our APs expire. Are there any restrictions?

You can do that. Many AP holders save the tickets and use them towards renewing their APs or use them on a future trip when they don't have APs. No restrictions other than the standard ones that apply to any MYW ticket.
