Anything better than Victoria and Alberts?

DH and I (maybe my mom if she can make it) are celebrating a major accomplishment. Once in a lifetime type deal. We are thinking of doing Victoria and Alberts although I know those reservations can be extremely difficult to get. We are thinking of getting a Coronado Springs tower water view room just to hopefully give us a 60+ 10. We normally stay at one of the disney partnered HIltons, but Coronado Springs has been my favorite hotel stay.
Any other suggestions for a good backup place to eat in case we can't get a Victoria and Alberts reservation?
We have done Cinderella's table, California Grill, Topolino, Flying Fish. Narcoossee's, Yachtsman and Shula's
I am DL native, but been doing WDW the last 7 years since moving out East. We are debating flying back West to use our club33 hookup for a dinner, but we are looking to try something new out here if possible.

Well, it's hard to find any dining experience in the area that compares to V&A. The restaurants you've visited already are pretty good. Be aware that Shula's is now Bourbon Steak, which is similar but different. For a really good dining experience, consider Bull & Bear at the Waldorf Astoria, but be prepared for an expensive meal.
 

I am not a big fan of MP. So I would suggest Cake Bake Shop. I wouldn't call it fine dining, but its more upscale than most Disney dining and just as nice as places you have been like Cali Grill and Flying Fish
 
If you want to venture off property, Kres Chophouse is really good. It is located not far from the Kia Center in downtown Orlando.
 
If you like sushi there’s a fancy sushi tasting in Japan. Forgot the name of the restaurant
 
On our last trip, we went back to Victoria and Alberts. Our 4th time dining there and it still is the best at WDW. If you enjoy Japanese, Takumi Tei is incredibly good. We did the Omakase tasting with Saki pairings. Nearly the same price as V&A and nearly 3 hours as well.
 
It's probably still one of the best 'experiences' at Disney as far as service and ambiance...but I think it depends on whether the food suits you or not. Being someone who doesn't eat any fish, many of the 'fancy' expensive meals like V&A, and Takumi Tei, and Prix Fixe like Monsieur Paul's, are not worth it for me as I don't like many of the courses and options.

I do much better at places like Bull & Bear, Jiko, Capa, Yachtsman, California Grill, etc where there's a wider selection of foods I eat. Price is not an issue for me - but what foods are offered is massively important Even some dedicated 'seafood' restaurants with open menus will offer me multiple non-seafood options - so I can get a good meal at Flying Fish or Narcoosee's despite my challenging food limitations - I struggle mightily at the high-end chef-curated-and-dictated menu places.

If you would otherwise be interested in Victoria and Albert's but don't like fish, you just need to let the restaurant know ahead of time so that you get a menu without fish. They can accommodate vegetarians, so "no fish" should be easy.

I wouldn't say Jiko is better than Victoria and Albert's, but it is my second favorite restaurant at Walt Disney World.
 
We will be staying (i believe) next door at the hilton. so that might be a good option
The "Hilton" next to the Waldorf Astoria (where B&B is located) is branded as "Signia". It's the same hotel though.
