Anyone tried the vegetable enchilada at Whispering Canyon?

I am a vegetarian going with several meat eaters and wondered if the enchilada was any good? It sounds good. Or would I be better just eating the veggies with the skillet dinner?

I haven't had it, but it's gotten poor reviews. There seems to be a new vegetarian item on a recent allears menu:

Sautéed Quinoa Cakes - Edamame, Cucumber Salsa, Grilled Zucchini, and a Tortilla Crisp $14.99

Hopefully a recent vegetarian diner can help you more. :)
 
Whispering Canyon changed their menu a few weeks ago & the veggie enchiladas aren't offered anymore. :headache: Sorry!

Oh my that doesn't sound very good at all. I think I'll opt for the potatoes and corn and beans.

My husband ordered this dish on our January trip. I just asked him about it and he said that it was good and he would definitely order it again. He is not a vegetarian, but we had been to Texas de Brazil the night before and I think he was tired of meat!

I can't remember from our last visit to WC, but their "cowboy beans" might have meat in them. You may want to ask on the Dis just to be sure.

Those sauteed quinoa cakes sounds awesome! I think we will check this restaurant out now!

You could prob order the arugula salad (arugula, black beans, corn, feta cheese) w/o the chicken. Or, order the turkey sandwich w/o meat & w/ a side of the veggie pasta salad. They're usually really accommodating.
