If it's a new release by Disney, it will always be playing on the ship. The question is whether the times are convenient for you and your family. But if you're willing to prioritize it, you can watch new releases on the ships. Usually in Buena Vista, but in the case of longer cruises, sometimes in the Walt Disney Theatre on a non-production night.
We just got off the Magic yesterday. They prem”eared” Star Wars at 11:00pm on Thursday night in both the Walt Disney Theatre and Buena Vista Theatre. On Friday, they showed it 3 more times in the Buena Vista Theatre and 2 more times in the Walt Disney Theatre.
We're cruising next week. Although I want to see Star Wars again, I'm really really hoping that the only movies playing aren't Star Wars and Frozen 2 (3 night cruise). Our last 3 night cruise they only had 2 movies playing and it was a real bummer as we like to catch several movies, especially if it happens to rain, etc.
