Anyone make great Pasta Salad?

I don't have a specific recipe, I usually wing it.

I use rotini or farfalle and any of the following

genoa
soppressata
mozzarella
provolone
bell pepper
roasted red peppers
celery
black olives
artichoke hearts
grape tomatoes

with a balsamic vinaigrette. Sometimes I make my own, sometimes I use Newman's Own



I also make a Greek orzo salad

orzo
kalamata olives
feta
marinated artichoke hearts w/liquid
feta
cucumber
tomato
spinach

a little lemon juice and olive oil

Orzo pasta salads are my absolute favorite - and I make mine similar, but change some ingredients depending on whether I want it hot or cold - yes, I do love it hot also!! :)
 
Pesto Tortellini:

Cheese Tortellini
Pesto
Shredded Parmesan
Bacon bits

Mix all together, refrigerate to cool and come together. Stir before serving. This one is good the next day also.


Caesar Pasta Salad

Bow tie pasta
Bacon Bits
Shredded Parmesan
Caesar salad dressing
Sliced Almonds
Hearts of Romaine
Croutons

I add the Romaine and croutons not long before serving otherwise mix it all together and let it set to combine. Stir before serving and add more dressing if needed.

Love it even more the next day, although the croutons and Romaine can be a bit soggy, but I just don't eat those.. ;)
 

I was just looking for a pasta salad for a small baby shower that I am throwing in April. I found this one that looks really good. It has more of a sweet dressing though and not "tangy".

Salad Ingredients:
8 ounces Ditalini pasta
1 cup tiny broccoli florets
1/2 cup diced cucumber
1/2 cup finely diced red pepper
1/2 cup sliced black olives
1/4 cup very thinly sliced green onion

Dressing Ingredients:
1/2 cup mayonnaise
2 teaspoons white wine or plain vinegar
1/2 teaspoon kosher salt, adjust to taste
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sugar

Cook the pasta according to the directions on the package, adding a generous tablespoon or so of kosher salt to the water as it cooks. Just before the noodles are done cooking, add the broccoli to the pot. Let the broccoli boil for about 30 seconds and then drain everything into a large colander. Rinse well with cold water.

Stir together the mayonnaise, vinegar, salt, pepper, and sugar in a large mixing bowl. Add the cooked pasta and broccoli to the bowl and stir well to coat. Add the cucumber, pepper, and onions and stir again. Taste and adjust seasonings, if needed. Cover and refrigerate until ready to serve. Stir again just before serving.

I make the Cesar one too. I use chicken and no bacon though :)

Tricolor Rotini noodles
Frozen Peas defrosted under cold water
Shredded Parmesan cheese
Black Olives


Topping:

1 cup T. Marzetti Sweet Italian dressing (found in refriderator section)
1 Tbsp of Mrs. Dash
Mix well and pour over pasta

( I usually double the topping by using a whole jar of the dressing and about a cup and half to 2 cups of mayo to taste)

Chedder cheese crumbles
Mozzerlla cheese crumbles
Jar of T. Marzetti Cole Slaw dressing

These sound awesome. After reading this I had to try the second one which I am making this week!
