Anyone here make applesauce? Need help!

I want to make some applesauce today, but can't figure out if I'm supposed to peel the apples before I cook them? The cookbook just mentions quartering and coring them. I don't remember eating apple skins in applesauce so not sure what I'm supposed to do - I'd be making smooth applesauce as opposed to chunky applesauce, if that matters.
 
Peel 'em. My mom used to make applesauce with the peels in and it was terrible. Like eating waxy leather with wallpaper paste.
 
Are you using a seive/food mill? If so leave on, if not than peel.
 
take the skins off and I would cut them smaller than quarters since you are smoothing them out anyway.
 

I love making applesauce! I used to only make it once a year till I started watching Rachel Ray - she uses macintosh apples because they "break down" (moosh!) easy - some apples - like Granny Smith - hold their shape, no matter how long you cook them!!

So then, take out a potato masher and mash them up!!

Like PP said, if you have one of those food mill thingys you dont have to peel - but otherwise, peel - add some brown sugar, and a touch of apple cider! YUM!

Its a sign of fall!
 
I always peel the apples first. Love the home made apple sauce and the smell, ah!!!!
