Anyone have recipes for Fish?

We are trying to eat healthier around here! I bought a bag of the skinless, boneless flounder at Sam's Club. Don't know how good it is but we are gonna try it! However, I never cook fish so I need some recipes. Also something that would please my DS7. Thanks in advance!!:)
 
One of the easiest ways to do a healthy fish is to spritz it with some butter spray (or plain Pam), then press some panko crumbs on the top and bake it at 350 for about 10 minutes, or however long it should take. It's always a hit here.
 
I have sprinkled with some type fish seasoning (citrus or old bay or dill or lemon pepper) and grilled it on my George Foreman for about 5 minutes or until it flakes. We like to squeeze fresh lemon on ours. It does help the seasoning to stick if you put a little olive oil or Pam on the fish first.
 
we love Fish Tacos!

Season fish-pan saute in a small amount of olive oil & butter

Meanwhile-cook the oversize tacos-1 or 2 per person

use one fillet per taco-if fish is big-cut in half

Shredded cheese,shred lettuce, chop tomato-add tartar sauce and black olives

Do you have a grill that you use? If so you can grill the flounder. It is a bit tricky since it is a very tender fish and you will need some "tools" like a fish basket or the wood planks. I have the wood planks and have not used them yet since you have to soak them and that is something you have to plan ahead.

You can also broil the flounder. It cooks quick under the broiler in probably 4-8 mins depending on the thickness. Have to raise your oven rack to the highest level and put it on broil.

We don't use breading, so if you do use breading you might have to adjust your cooking times.

It is a hard fish to cook because it is so tender and easily overcooked. Orange Roughy is a good substitute for flounder.

I do prepare it by spraying with Pam and maybe a spritz of lemon or whatever. Have to watch the butter because it can burn. Sometimes I will put melted butter on it right after it comes out of the oven. Maybe not healthy but it can jazz up white fish.
 
This is probably the easiest and tastiest you can find.

Go to your local fish market, get fresh Atlantic Salmon in 6 ounce fillets.

Put in glass oven dish.

Rub olive oil on it (I use 1/2 TBSP of Smart Balance Omega 3s for each fillet).

Generously sprinkle some Chef Paul's Magic Salmon Seasoning.

Sprinkle a little lemon juice on the top of it.

Bake at 400 degrees for 15-20 minutes depending on thickness.

Enjoy.
 
Dip each fillet in egg, then parmesan cheese..you can use any kind, but we prefer the fine shredded kind you get in a jar rather than the Kraft-powdery sort. We also do this with chicken breasts, but use mayo rather than egg for the base coat...just pop it in the oven at 350 or so. Yummy, and my dd loves it because of the cheese.
 
This works with any "white" fish (not so much with salmon, tuna etc... or maybe its just that I don't like those :upsidedow ).

Anyhow, place the fillets in a baking dish (spray the dish with a little non-stick spray first), and place a small pat of butter on top of each fillet. Sprinkle each fillet liberally with a citrus juice... I usually use lemon, but you can use any citrus; lime, orange, even grapefruit. Chop some fresh herbs - try to use herbs that match your citrus - for lemon, I usually use fresh parsley and fresh lemon thyme, and sprinkle those on top. Finally sprinkle the fish with a no-salt or a low-salt seasoning blend. Bake at 350° until the fish flakes easily and is opaque. When it is done, place the fish on the plates, and stir up the pan juices well, then spoon a little of the pan juices (butter, lemon, herbs, etc) over the top of the fillet.

You can also give this an Italian twist. Drain a can of diced tomatoes, reserving the juice. Place the fish in the pan, put the butter on top, and add the tomato juice instead of the citrus juice. For your herbs add chopped basil, garlic chives, chopped garlic, or anything else italian-y. Finally, add some of the the drained diced tomatoes on top, and sprinkle with some fresh grated parmsan cheese. While the fish cooks, boil up some pasta, toss the hot pasta with the rest of the tomatoes and chopped herbs and anything else you have around (capers, olives, artichoke hearts, etc?) and when the fish is done, serve the fish on top of the pasta with the pan juices poured over the top. :love:
 
I buy individually wrapped, frozen tilapia filets at Costco and this is what I do:

Thaw the fish.

Sprinkle with salt and pepper. Combine a little olive oil, Dijon mustard and fresh lemon juice and brush the fish on both sides. Sprinkle both sides with Panko bread crumbs.

Spray a baking sheet with cooking spray and bake in a 400 degree oven for about 20 minutes.

So simple and very good (and healthy).
 
If calories don't bother you......
mayo with lemon/pepper salt, mix well.
Use that to coat the fish, both sides.
In a separate dish, combine grated parm cheese and bread crumbs or panko.
Take coated fish and press into cheese/bread to coat.
Heat saute pan to med/medhigh with olive oil (just enough to keep things moving)
Cook fish for a few minutes each side. Varies with the thickness and density of the fish.
You will know it is done, when the fish fillet flakes easily. Remember, it will continue to cook after you remove it from the heat, so under is better than over.

You can also do this recipe on the grill. Just line the grill with foil that you have sprayed with Pam or coated with olive oil.

The Mayo keeps everything nice and moist. If you don't like the salt combo, you can substitute fresh lemon into the mayo, which taste better in some cases.
 
4 ways I typically do fish

1. Mix bread crumbs, Italian seasonings, garlic and parm cheese ( not fresh) and do like a shake and bake. Dip fish is water, shake in mixture and bake for about 15 min or till flaky. (tilapia)

2. Poach it in a mixture of water and lemon juice ( sorry dont measure, just what looks/tastes ok) with pepper and garlic

3. Mix oj and garlic together and poach fish in it

4. Grill Salmon and top with a mixture of Sour Cream, oregano, garlic and lemon juice
 
This recipe is so easy and delicious.


Bloody Mary Salmon

Ingredients
1 cup tomato juice
2 ounces vodka
1 teaspoon horseradish
A few splashes of Worcestershire sauce
2 tablespoons lemon juice
Large splash olive oil
1 stalk celery, chopped
2 salmon filets, 6 oz each

Directions
1.Pour tomato juice, vodka, horseradish, Worcestershire, lemon juice, olive oil and celery into a shallow pan.
2.Bring to a gentle simmer and add salmon filets.
3.Cover with a tight fitting lid and let salmon poach in the liquid for about 10-12 minutes, until it is just cooked through.

I adore tilapia! I ususally roll out sheet of renolds wrap fold up on the top and bottom and sides, sprinkle foil with oilive oil be generous, place tilapia fillets on top of oil, sprinkle Mrs. Dash lemon pepper generously. fold foil over so as to make a packet. Pleace packet on grill. We use the indirect heat method and grill until done. It can vary because most of the time i do not even thaw it. It is done when you can flake it with a fork. Yummo!!!!!

I get the stuff from Costco, too! So tasty! I never thaw it first though. Just take one out of the freezer when I get home from work and throw it in the oven. Takes about 13 minutes at 400.

I usually put a little evoo or light mayo on the fish - a very thin layer. Then I put on a good amount of lemon/pepper seasoning. And THEN squeeze some fresh lemon on it. bake for 13 minutes and yum!!

I have eaten this for dinner for the last few weeks...and again tonight! So quick and easy. I do a big pan of wilted spinach and brown rice...both are done just as the fish finish! Longest part of cooking dinner is preheating the oven :)

I usually do this with cod fillets, but I don't see why it wouldn't work with flounder. It's surprisingly delicious.

Drizzle olive oil into a rectangular Pyrex baking dish--enough to lightly coat it. Squeeze half a lemon over the oil. Season one side of your fish and place it seasoned-side-down on top of the oil, then season the other side. Dice up 3 or 4 fresh plum tomatoes and cover the top of the fish with it. Sprinkle grated cheese on top--at least 2 tablespoons. Then squirt it with the other lemon half.

Bake at 350 for about 20 minutes. It's simple to do and very tasty. :)
 
Salmon is my favorite fish. Whenever I make it, I always marinate it in a lemon and pepper sauce (you can buy it in the marinade section.)
I like to make red potatoes with this. Great, and I do mean Great, meal!!!:thumbsup2
 
I make a rub of brown sugar & Philips Old Bay Seasoning - mix together in a bowl. I just spray the fish with olive oil Pam and rub with the sugar/seasoning mix. You can make it as spicy as you like. My kids eat fish this way without complaining - and believe me, if my 15 yr old had the slightest dislike for it, the entire town would know.
 
I have also used Chicago steak seasoning on fish - it gives a good flavor.
