Anyone have a good receipe for Strawberry cake?

DD wants a strawberry cake for her birthday. I know I can buy a box mix, but thought I would try making a tastier one for her instead. Anyone have a good receipe?
 
Here is a yummy & very very easy strawberry cake. It is moist & delicious. You leave it in the pan...so it doesn't look as fancy though.

Strawberry Cake with Glaze


1 pkg. white cake mix
1 pkg. strawberry jello
3 Tablespoons Flour
4 eggs

Put these items into mixing bowl...then add:

1/2 cup water
1 cup oil
1/2 pkg. of frozen thawed strawberrie pcs.

Mix well.

Put into a greased & floured rectanglar pan.

Bake at 350.

Glaze:


1/2 stick melted butter
1/2 pkg. thawed frozen strawberry pcs.
3 cups powder sugar


Mix well & pour over cooled cake.
 
could you make a white cake, color it pink and perhaps use strawberries between the layers?

I opened the thread to post this recipe, it is my absolute FAVORITE cake, and the one I have every year on my birthday. I can add a couple tips though- make it a day ahead, it really helps the flavors and lets the glaze penetrate. Also, we always refrigerate it. I hope you'll try it!
 

Strawberry shortcake? If you want, you can make up tea biscuits and do individual, cupcake-sized shortcakes with sweetened whipped cream and sliced berries. Messy to eat, but so yummy! An alternative would be to take an angel food (or a plain vanilla) cake, and frost it with cut up strawberries in sweetened whipped cream.
 
This is a really good cake - not a pretty cake, but it tastes great.


Rosalyn Carter's Strawberry Cake

1 (18.25 ounce) box yellow or white cake mix
1 small box strawberry gelatin
3/4 cup vegetable oil
1 cup chopped nuts (optional)
4 eggs
2 tablespoons flour
1 (10 ounce) package frozen sliced strawberries, thawed,
or 1 pint fresh berries sprinkled with 1/2 cup sugar
1/2 pint heavy cream, whipped

Preheat oven to 350 degrees F. Grease a 10-inch angel food or Bundt pan.

Combine cake mix, gelatin, oil, nuts, eggs, flour and strawberries in large bowl. Beat on medium-high speed for 3 minutes or until well blended. Pour batter into pan and bake for 55 to 65 minutes or until tester comes out clean. Cool 10 minutes on rack.

Turn out and cool completely. Serve plain or with lightly sweetened whipped cream.
 
I usually use the same one that magicalmawmaw posted (In fact, I got the recipe from my mawmaw!!), and it is delicious. Paula Deen has one that is very similar but richer... I made it once and it was a hit, but I prefer the one posted above. Paula's was just a tad too sweet for me.

You bake it for 35-40 minutes :) Soo yummy, I think you all will love it!
 
Coincidentally, a co-worker passed this recipe along to me today. We are both "scratch" cooks and don't bake with mixes, so if I were going to make a strawberry cake, it would be this one. It looks amazing!

ETA: If I get around to it anytime soon, I'll use fresh strawberries throughout, as they're in season in Florida now.

I just made this and it looks so good. Amazingly enough, I had all the ingredients in my house. Fresh strawberries were on sale this week (2 pints for $3) so I used some of those, but I did have some frozen ones hiding in the back of the freezer.
 
Baking time is about like any cake...about 35 to 40 minutes.
I really never use a time.
When a toothpick comes out clean it is done...is the method I usually go by.

Hope it turns out great for you.

Hint...might want to sift the powdered sugar for the icing...sometimes it has lumps if you don't. Tastes the same...just not as pretty. And if you want the icing more strawberry looking...add a drop or two of red coloring.

My mom makes this cake a lot in the summer and it is wonderful. Very light and delicious.

Cut up a package or two of fresh strawberries, cover with sugar and put in the fridge overnight.

make a regular box white cake according to the package directions in a 9x13 pan. Let cool. take a fork and poke holes all over the top of it. Spoon your strawberries and their syrup over cake and let it soak in over night in teh fridge. Just before serving you make real whip cream and frost the cake with that.

The strawberries and their syrup have soaked into the cake and it is so delicious. My sister has my mom make her this cake every year for her birthday.

My friend and I thought it would be awesome with fresh strawberries, but thought it might be best to sugar them and let them sit awhile to bring the juices out when using fresh in place of the frozen berries.

If you follow the directions (which aren't all that hard), you will get a cake that looks very similar to the picture.

I did add one drop of red food coloring to the icing which made it more pink.

I happened to have some frozen berries in the back of my freezer. I didn't have quite enough -maybe 2 oz short so I added a few fresh ones with it. I then microwaved them to pull out the juices. The juice and the berries are both used in the icing. I guess if you had no frozen, you could use fresh. I wouldn't put any extra sugar on the berries because you will have sugar in the icing and sugar in the cake.


Update: We cut the cake and ate some of it. The cake is a bit dense. I was running low on flour, so I may not have had *just enough* or *not quite enough*. The icing was amazing! My hubby loved it, and my son liked both. My daughter liked the icing better than the cake.
The cake itself is very easy to make. The icing was more time consuming. You will need a pretty sturdy mixer to make the icing. I have a stand mixer and it worked wonderfully.

If you had two people you could work on two things at once so it wouldn't take all that long to do. One could start on the cake while the berries and going and so on. As for time consuming, it did take a while-but I was working leasurely, taking som e breaks and working by myself.

There are some definete time saving measures like presoftening the butter and getting the milk to room temperature before you even start.

Even though it looks like a pain, putting in the butter and cream cheese a little bit at a time really does wonders!
