Anyone have a good meatloaf recipe?

My DH loves meatloaf and I've never really made it before. Anyone got any ideas?
 
House Of Blues' Cajun Meatloaf

4 oz. unsalted butter
1 1/2 oz. sliced green onions
1/2 C. chopped yellow onion
2/3 C. chopped celery
2/3 C. chopped bell peppers
1 T. minced garlic
3/4 C. heavy cream
3/4 C. ketchup
2 1/4 lbs. ground beef
12 ounces ground pork
4 eggs
1 1/2 C. fresh bread crumbs
1 T. hot sauce
1 1/2 T. Worcestershire sauce
1 1/2 t. salt
1 1/2 t. cayenne
1 1/2 t. black pepper

Heat oven to 325° F. Line a loaf pan with parchment paper.

Melt butter in large pan. Saute onions, celery, bell peppers, garlic until tender. Stir in cream, ketchup. Cook 5 minutes. Cool. Combine with remaining ingredients. Fill pan with mixture, packing to make sure there are no air pockets. Bake 2 hours, or until internal temperature is 160 F. Let stand at room temperature 10 minutes. Drain grease. Refrigerate 2 hours.

How to make gravy:
Saute 1 1/2 pounds mushrooms
10 ounces diced Spanish onions
10 ounces diced bell peppers
10 ounces diced celery in 1/4 cup hot vegetable oil
until soft and mushrooms have released their liquid.

Add 1/2 teaspoon black pepper, 1/2 ounce Worcestershire sauce and 1 1/2 teaspoons chicken base. Turn off heat. Drizzle in 3 1/2 ounces flour. Mix with whisk so that flour is well incorporated. Slowly mix in 48 ounces beef stock with whisk, making sure there are no lumps. Turn on heat. Bring to a simmer. Stir occasionally so gravy does not stick to pan. Simmer 15 minutes on low. Remove from heat. Cover meatloaf slices with gravy.


My daugher in law made this and brought some to us ......IT WAS OUTSTANDING.....and I am not fond of meatloaf.......I really didnt care for the gravy which was not really necessary for the dish.....and she used beef
 
My mother was the WORST meatloaf-maker ever. Pretty much a great cook otherwise, but for some reason, she couldn't master meatloaf. For that reason, I never cared for it much, and never made it. But of course, I married a man who loved meatloaf, so I decided to give it a try.

I bought the McCormick brand packet of meatloaf seasoning and followed the directions on the back, using milk instead of tomato sauce. I also finely dice two slices of bread instead of adding breadcrumbs. It's UNBELIEVABLY good -- not to mention super easy!!! I have even served it to guests and have received compliments. (I just am a little sheepish when asked to share the recipe, just as I am here!:blush:)

Now, I use half ground turkey and half very lean ground beef when I make it. (I make sure the spray the pan with cooking spray before baking it, due to the reduced fat.) The flavor is not discernably different. Some in my family like it with ketchup on it and other prefer brown gravy (also made from a McCormick packet mix!)

Every now and then, shortcuts really pay off! ;)

Meatloaf Muffins with Barbecue Sauce

1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Micro-way-cool Bacon and Green Beans, recipe follows
Smashed potatoes and cream cheese, recipe follows

Preheat oven to 450 degrees F.
Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes.
 

This is the one I use - I made it up myself using partly a recipe off the TV, partly DMIL recipe (she is Hungarian) and partly what I thought would be best:)

Hungarian-style meatloaf (serves 6-8)

1 clove garlic, crushed
150g bulgar wheat
500g lean beef mince
500g pork mince
2 large eggs, lightly bneaten
1 medium onion
130g shallots (or more onion)
½ pack (75g) stuffing
Large handful fresh herbs, chopped, or 1-2 tsp dried
Salt and black pepper
Oil (for greasing)

1. Place bulgar wheat in a mixing bowl and cover with tap water. Leave to soak for 10-15 mins. Meanwhile make up stuffing according to pack instructions and leave to stand. Peel and finely chop onion and shallots.
2. Press as much water as possible out of the wheat. Break up the stuffing. Put all the ingredients in a very large bowl (min 5 litre capacity) and mix well until thoroughly combined. (This can be done in a food processor but gives a smoother texture).
3. Lightly grease a large loaf tin and press the mixture in firmly, making sure the top is level. Brush top with a little more oil and place in preheated oven (180ºC, gas 4, Fan 160º) for 1 hr 15 mins – 1 hr 30 mins or until done (juices run clear when top is pressed by a knife point)
4. Remove from oven and leave to rest, covered, in a warm place for 15 mins. Turn out and carve into nice thick slices, serve with mashed potato and cream of spinach or gravy.
5. Cooked, ready-sliced loaf can be frozen (well wrapped). Defrost in the fridge, then reheat for 25 mins at temperature as above for 25 mins or until piping hot.

1 pound ground beef
1 package traditional Stove Top
1 egg
water to consistancy

Pam a muffin tin, seperate into 12 equal portions (one in each muffin section).
Bake at 450 for 15-20 minutes.

We like the Hunt's Meatloaf sauce warmed and served on top.
 
Meatloaf is one of the few things that I used to think my mother made better than I could. Of course she didn't use a recipe - just dump things together, which is pretty much the way my grandmother taught her. Eventually I learned that what was missing was the bread crubs...I'd been leaving them out because I needed to count EVERYthing I ate.

Ever since our stay at AKL I've been a bit more adventurous with adding spices to things. My recipe now includes many of the spices that flavor some of the meats we enjoyed at Boma. ;)

Meatloaf
1 lb ground beef (I use 90% lean)
1 egg, beaten
¼ c ketchup or BBQ sauce
1 - 2 Tbl A-1® sauce
1 Tbl Parmesan cheese
2 - 3 tsp Worcestershire sauce
several drops, maybe 1/8 tsp Liquid Smoke®
½ tsp cardamom
½ tsp coriander
¼ tsp ginger (dry, ground)
1 tsp garlic powder
bread crumbs (usually Progresso Italian)

Mix everything together except bread crumbs until evenly distributed. Add bread crumbs until you can make a loaf out of it without having it stick to your hands. I'm guessing at least ¼ cup. I usually have to add several times until it "looks right" as my grandmother would say.

Old-fashioned Meat Loaf- A.K.A "Basic" Meatloaf Recipe courtesy Paula Deen

1 pound ground beef
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard


Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.
 
my sons often requests this meatloaf..

1 1/2 lbs hamburg
2 cups cubed bread
1 packet taco seasoning
2 eggs
1/2 cup salsa

.... mix and bake..about 10 minutes before its done I sometimes top it with shredded mexican cheese.

I'm not very good at writting recipes becouse I wing it most of the time.
 
I love the meatloaf my mom made and now I make it.

1.5 lbs ground beef
2 tbs. minced onion
1 1/3 C soft bread crumbs (fine)
1/2 C milk
1 egg
2.5 teas horseradish
.5 tbs dry mustard
3 tbs ketchup Plus an additional 1/3 C ketchup
salt

I also add minced mushrooms to it. I don't measure so I am not sure if those measurements are exactly how I do it. I have also added in some italian bread crumbs when I have been short on regular bread and that adds a very nice flavor.


Mix it all together and put in bread baking pan. Top with the 1/3 C of ketchup and bake at 350 for 1 - 1.5 hours.

I used to have a camp fire meatloaf recipe that used Bisquick, and could be made in a cast iron skillet. Does anyone happen to have a copy of that one laying around?

I know meatloaf is not your typical "camp fire" food, but it was strangely satisfying on a cool evening.
 
This is my great Aunts recipe I think from the 1950's

Paulines MeatLoaf

2 eggs
1 8oz. can tomato sauce
1/2 cup cracker crumbs
1/4 cup diced onion
1/4 cup diced green pepper
1 teaspoon thyme
1 teaspoon majoram
1/2 teaspoon salt and pepper
1 1/2 pounds ground beef


mix all of the above and bake at 350 till done (about and hour)
