We just had an 80th birthday party for my mother and the caterer had 2 large containers of ham and egg salad left over. He gave it to me. I have had it for lunch for the last week but am really tired of it. I was wondering if anyone had frozen about a 1/2 gallon of these and what were the results? Thanks

As a true budgeter, I just can not let this spoil!!

I'm guessing they include mayonnaise...which means they will not freeze well at all.

Mayonnaise separates when frozen, and won't 'recombine' when defrosted.

Ham freezes well. You can leave it sliced or cube it up and freeze it for soups. The salad, I dont know how well that would freeze.

There is some mayonaise in them but actually much less than I would have put in them. They were almost a little dry for my taste. I guess it is worth a try. I may be able to save it. I will give it a try. I am going to try the ham salad as the filler in my ham and cheese breakfast casserole this weekend. i'll let you know if I come up with a great new dish!!
