Any way to get one more night?

It's the Saturday of a holiday weekend, so I'm not surprised there is minimal availability and no discounts. But you've gotten some good suggestions, you can 100% schedule a ME ride from the airport without specific flight information (just a pickup time and destination), so booking something close to the airport might work. We just did this and stayed at the Hilton Garden Inn near the airport (they also have a free shuttle to and from the airport). Another option would be to pick something close to Disney Springs for that night. You wouldn't be able to use ME to get to the DS hotels, but you could Uber/Lyft and then pick up a bus from DS to your resort the next day (depending on how far you'd have to walk and how much luggage you have with you).

When I spoke to a CM they weren't sure and suggested I just show up and explain the situation. Which worries me.

You just tell them the approximate time you expect to be arriving to the ME area, and what resort you are traveling to. You should be calling DME directly and not the Disney line, since DME is actually run by an outside company.

Find a flight that arrives around the same time you want to catch DME on your arrival day and simply give them that flight information. You don't actually have to be on that flight.
 

After booking our trip we decided to fly in a day earlier. We decided to stay at a near by Marriott ( I have a free night I can use).
 
Keep checking back. (You don't have to refresh several times a minute like you do when trying to book hard to get fast passes.)
