any tricks for getting the shell off cleanly from hard boiled aggs?

I'm making an appetizer that needs hard boiled eggs, and I would like them to look good. I know they say that older eggs work better, but all I have is eggs that I bought today, and I need to prepare the app tomorrow.... making Adobe Chipotle pickled eggs.
 
Ugh, yeah the best trick is buying the oldest eggs. But when they're relatively fresh, what you can do is take them out of the boiling water and immediately immerse them in a bowl filled with ice and water for about a minute, then put them back in the boiling water for a minute, then back into a bowl of ice water.

Pain in the butt, but it helps.

You can also peel them inside a bowl of cold water. That helps the shells slide right off.
 
The only way I know is to pour cold water over them quickly (from boil to cold) and keep cold water on them until they are cool. I then roll them on the counter until the shell breaks apart and pick off the pieces. LOL - now that I think of it, that might not be the best way, but it's what I was taught years ago by my only friend who could cook! :thumbsup2

She also taught me to throw spaghetti against the cabinet to see if it was done. :lmao:
 
After they are finished cooking immediately drain the hot water and put them under very cold running water and leave them there for a few minutes.
 

I agree with everyone, don't use fresh eggs. However, if you buy Egglands Best, they peel like a dream even if you just bought them. They are wonderful. They cost a little more but they are so worth it. My pediatrician said they are really about the best out there.
 
I always drop them straight into cold water to cool and then roll them in the sink and peel under cool running water. The only time I ever have trouble is when the eggs are allowed to dry out after boiling, I've never noticed a difference between fresh or old eggs.

So, I tried the above method today with a dozen eggs. Overall it went really well. You just have to make sure you get a nice crack on both ends. Put it this way, they all came out well enough that I wouldn't be ashamed at the way they look if I was making deviled eggs.... Usually I only get about 50% of the eggs to look good, and the 1/f that don't look good get chopped up for tuna salad.

This. and use really COLD water running over them when you shell them.
