Any tips for using DDP &DDE on the same meal

I've heard that you can use both for the same meal, DDP for food and DDE for alcohol and extras not covered by DDP. How does this work? Do you just tell the server?

I would mention it to the server when you order or when they bring your drinks. I was nicely told twice that I should have said something about DDE before they brought my check. Some don't care, some do. I think it's easier for the server if they don't have to re-do the bill after they bring it.
