Any Tips for Healty Eating at WDW & Orlando?

I don't want to come back weighing heavier than when I went on holiday at WDW and know that all the walking will help BUT any tips for healthy eating would be appreciated - specifically:

Any off site or on-site restaurants you recommend?
Do most restaurants offer fat-free dressings for salad?
Will they accommodate if you have special requests?
What are the low-fat treats to be had at WDW? (I do like ice-cream so any creamy substitute suggestions welcomed!).

I'm not on Atkins, just trying to eat low-fat.

I try to stick to eating low-carb (not low-fat) and I have no problems finding places to eat! Most (if not all) of the Disney restaurants are very accomodating, if you tell them you're on a special diet. I'm sure the same thing goes for low-fat diets! Just tell your server that you're eating low-fat, and I'm sure he/she will be able to make some suggestions! ::yes:: :wave:
