Any rhyme or reason to ADR availabilit

So our 180+10 window just came up a couple days ago, and unfortunately we were moving cross country and had issues with the Disney website (not sure if it was on our end or theirs). Long story short, I only was able to make one reservation the day our booking window opened, but there seemed to be lots of availability for all the super popular restaurants like cinderellas royal table, chef Mickey, etc. We don't usually book the super popular ones, so we rarely have an issue. Well, at 183 days nothing at Akershus, during our entire stay, no early morning Tusker House!? But we got Ohana. Weird. Tusker House is always easy for us, and we have gone the same week, same approximate time for 3 years. We have never booked this early though. Do the less popular restaurants roll out fewer times this early? Is there a day or time that would make more sense to check back. We want to book for our daughters birthday, otherwise, I'd just drop the issue. But she loves Snow White, and it would truly make her day. It just seems strange that at 1-3 months in advance there are lots of openings, but now nothing. This is the first time we've used our early booking "benefit", and it's the only time I've not gotten what we wanted!
